1) Cut potatoes into wedges

2) Par-boil the wedges until knife-tender

3) Drain and leave aside to cool and dry out

4) Toast sesame seeds till golden and nutty

5) Toast dry chillies to maximise flavour

6) Grind the toasted chilies into a powder
