Orange and Pistachio Loaf

A wonderfully light Orange and Pistachio Loaf infused with an abundance of orange zest and nutty pistachios. Best served with a coffee or tea.

1) Start by mixing oil, sugar, vanilla, and orange zest

2) Whisk to release the essential oils from the orange

3) Then add in ground flaxseeds with water (optional)

4) Whisk that together well

5) Then mix the milk with orange juice and let sit

DISHBYRISH.CO.UK

6) Add the orange juice and milk in to the bowl

DISHBYRISH.CO.UK

7) Then sift in flour, baking powder, and salt

DISHBYRISH.CO.UK

8) Whisk everything into a smooth batter

DISHBYRISH.CO.UK

9) Add in the ground pistachios

DISHBYRISH.CO.UK

10 Fold the pistachios into the orange cake batter

DISHBYRISH.CO.UK

11) Then pour the cake batter into a lined loaf tin

12) And bake!

13) Whilst warm, pour over an orange syrup

DISHBYRISH.CO.UK

14) Wrap with clingfilm and place into the refrigerator

15) Finish with a crackly orange glaze

DISHBYRISH.CO.UK

16) As well as some chopped pistachios
