This Chilli Cheese Garlic bread adds a spicy twist to the classic garlic bread. It’s full of heat and flavour with an immensely cheesy finish.
It’s no secret that chilli, garlic, and cheese are my soul flavours. That’s all I need in a dish and I’m sold. You can count me in.
But make it something that’s quick, easy, and more-ish and it’s a no brainer really. This is a recipe I have on repeat, especially when I have friends and family coming over.
This is the perfect recipe if you’re looking for something that is full of flavour, cheesy, and quick and easy to make.
Chilli Cheese Garlic Bread
As the name suggests, this Chilli Cheese Garlic Bread is more than your ordinary garlic bread. It’s the spicy counterpart with even more flavour, and a bit of a kick.
And that makes it perfect for any of my fellow spice fiends (this one is for you guys!).
It starts off with a lovely ciabatta base, though you can use any bread you like instead. It’s then topped with a spicy and buttery garlic spread, followed by a generous amount of mozzarella.
The more generous you are with the cheese the better I say! It is after all a chilli cheese garlic bread.
Bake till the cheese has melted and the crust has gone a little crusty. The inside of the ciabatta will have soaked up the spicy garlic butter as it melted. It’s honestly garlic bread heaven.
Garlic bread is great, but this is even better
This is in no way my attempt to say that the original needed changing or improving. Because it doesn’t.
Garlic bread has been one of my favourite things for years. I used to treat myself to an entire garlic baguette from Tesco many times throughout university, and even after.
But I do love spices and some chilli too, so a Chilli Cheese Garlic Bread was always going to happen. I’ve tried plenty of these in restaurants and been totally disappointed every time.
I don’t think sprinkling a few chilli flakes over some cheesy garlic bread does it justice. But I do think that my recipe does (in my humble opinion).
You can Chilli Cheese-ify loads of things!
The combination of cheese and chilli is nothing new, it’s been around for ages. The cheese is rich and a source of fat which in turn helps to balance out the sharp heat you can get from chillies.
You can find cheese and chilli being used throughout plenty of cuisines and it’s become hugely popular in Indian street food and stalls.
I guess even these Crispy Jalapeno Poppers could count as chilli cheese, right? Or perhaps even chilli cheese jacket potatoes, or chilli cheese pizza. You name it, it’s going to be great.
It’s kind of inspired by chilli cheese toast
Chilli cheese toast has always been a great one, a simple buttered toast topped with any cheese of your choosing. Followed by chillies, onions, coriander, and sometimes chaat masala too. Grilled until the cheese is bubbling and oozing.
It’s a real delight!
This Chilli Cheese Garlic Bread is always a hit at parties
This is one of the appetisers/starters I tend to make quite often, especially when friends and family are around. It’s so incredibly easy to make and a guaranteed crowd pleaser.
It also really impresses people when you bring this out. It packs in a lot of flavour and the cheese is genuinely the icing on the cake, so to speak.
Plus I think when it comes to party food, you want something that’s rather quick and easy to make. Also something that can easily be scaled up with ease.
So if you have a lot of people coming over
Then simply double, triple, quadruple (etc), the recipe and it becomes perfect for serving to large groups. It’s not going to take much time at all, I promise.
If you have children or people who are not a fan of spice, feel free to omit the chilli and chilli powder. It still tastes great with the other flavours.
What you’ll need

- Ciabatta or any other type of bread that you like
- Butter – you can use salted or unsalted. If you use unsalted make sure to add salt!
- Garlic
- Red chillies – I like to use birds eye red chillies for extra heat
- Kashmiri chilli powder
- Mango powder
- Chaat masala
- Black pepper
- Fresh coriander
- Mozzarella – or your favourite cheese instead
How to make this Chilli Cheese Garlic Bread
1) Mix together softened butter, minced garlic, minced chilli, minced coriander, and minced spring onions. To soften butter, just leave the butter out until it comes to room temperature. It makes it easier to mix
2) Then add all the ground spices in too (chilli powder, mango powder, chaat masala, and black pepper)
3) Mix until it forms a chilli garlic butter like so. Starting with softened butter makes this far easier to mix. I’d recommend tasting the butter at this stage to see whether you’d like to add any salt
4) Use any bread you like, I prefer to use ciabatta for this Chilli Cheese Garlic Bread. Slice the ciabatta into two pieces
5) Split the chilli garlic butter evenly between the two ciabatta slices
6) Spread the butter all over to coat evenly
7) Top with mozzarella, and be generous here. The second component of chilli cheese is the cheese after all
8) Bake till the cheese has turned golden and melted all over. Slice into equal pieces and enjoy!

Chilli Cheese Garlic Bread
This Chilli Cheese Garlic bread adds a spicy twist to the classic garlic bread. It's full of heat and flavour with an immensely cheesy finish.
Ingredients
- 90g salted butter, softened
- 6 cloves garlic, minced
- 2 bird's eye red chillies, minced
- Small handful of coriander, minced
- 2 spring onions, minced
- 2tsp Kashmiri chilli powder, or paprika
- 1tsp mango powder
- 1tsp chaat masala
- 1/2tsp black pepper
- 200g mozzarella
- Ciabatta or any bread of choice
Instructions
- Pre heat the oven to 180'C/200'C fan/360'F
- In a bowl mix together the softened butter, garlic, chillies, coriander, spring onions, chilli powder, mango powder, chaat masala, black pepper. It's worth tasting at this stage to see if you'd like to add any salt. I find the salted butter and chaat masala provides enough seasoning for me, but adjust to your preference
- If using a ciabatta loaf, cut in half and spread the chilli garlic butter evenly over each piece
- Top with mozzarella, feel free to use less or more than what I have
- Bake for 20 minutes or until the cheese has melted and turned golden brown
