Try these flaky filo parcels filled with buttery mashed potato along with leeks, garlic, sage, chilli and large chunks of melted brie.

1) Par boil potatoes until knife tender

2) Drain and place in a pot, covered, to steam dry

3) Sauté leeks in butter

4) Then add in garlic, red chilli, and sage

5) Sauté everything till fragrant

6) Grate the potato or pass through a ricer

7) Add in the leek mixture to the potatoes

8) Give everything a good mix

9) Add in plenty of chopped up brie

10) Give everything another good mix

11) Place a heaped spoonful of mix on to a sheet of filo

12) Start folding the top corner over

13) Then fold the sheet downwards

14) It will start to form a triangle!

15) Fold the top corner over once more

16) And down again

17) Repeat until you get near the end of the pastry sheet

19) Brush the last piece with butter to help it stick

20) And fold over to stick
